Anzer bal ve poleninin bazı biyoaktif özelliklerinin in vitro olarak incelenmesi

Abstract

Bal ve polen tedavi kaynağı olarak kullanılan bazı biyoaktif bileşikleri içerirler. Bu çalışmada Doğu Karadeniz Bölgesi Anzer Yaylası'ndan toplanan arı bal ve polenleri kullanıldı. Anzer balının saflığının belirlenmesi açısından öncelikle fiziksel ve kimyasal parametreleri çalışıldı. Sonra bal ve polenlerin antioksidan özellikleri ve hyaluronidaz ve üreaz enzimlerini inhibisyonu analiz edildi. Antioksidan kapasiteyi belirleyen testlerin sonucu: toplam fenolik içerik ballarda 22,01±0,25, polenlerde 753,21±0,91 mg GAE/100g numune; toplam flavonoid içerik ballarda 2,32±0,04, polenlerde 245,03±2,48 mg QE/100g numune; toplam tanen içerik ballarda tespit edilemedi, polenlerde 34,94±1,21 mg KE/100g numune; demir (III) indirgeme antioksidan kuvveti (FRAP) ballarda 90,51±1,13, polenlerde 390,65±2,39 µmol Troloks/100g; DPPH• (2,2-difenil-1-pikrilhidrazil) radikali temizleme aktivitesi ballarda 58,94±0,73, polenlerde 1,47±0,02 mg/mL olduğu bulundu. Anzer bal ve polen ekstraktlarının hyaluronidaz ve üreaz enzimleri üzerine inhibisyon etkileri IC50 değerleri olarak hesaplandı. IC50 değerleri hyaluronidaz için ballarda 0,17±0,01g/mL, polende 0,07±0,01 g/mL, üreaz için ballarda 21,83±0,01mg/mL, polende 1,32±0,00 mg/mL'dir. Sonuç olarak hem bal hem de polen ekstraktlarında, enzim inhibisyonları ile antioksidan kapasite arasında pozitif korelasyonlar vardır. Honey and pollen have some bioactive compounds that are used as treatment source. Bee honey and pollen harvested from Anzer Plateau of Eastern Black Sea Region included to the study. To check the purity of Anzer honey firstly physical and chemical parameters were studied. The antioxidant and inhibition properties of honeys and pollens on hyaluronidase and urease enzymes were analyzed. Average results of antioxidant capacity determines tests: total phenolic content for honey 22,01±0,25, for pollen 753,21±0,91 mg GAE/100g sample; total flavonoid content for honey 2,32±0,04, for pollen at 245,03±2,48 mg QE/100g sample; total tannin content was not detected in honey, for pollen 34,94±1,21 mg KE/100g sample; iron (III) reducing antioxidant power (FRAP) for honey 90,51±1,13, for pollen at 390,65±2,39 µmol Trolox/100g sample; DPPH• (2,2-diphenyl-1-picrylhydrazyl) radical scavenging activity for honey 58,94±0,73, for pollen 1,47±0,02 mg/mL were found. Inhibition effects of Anzer honey and pollen extracts on urease and hyaluronidase enzymes were calculated as the IC 50 values. The results of hyaluronidase IC 50 for honey 0,17±0,01g/mL, for pollen 0,07±0,01g/mL, urease IC 50 for honey 21,83±0,01 mg/mL, for pollen 1,32±0,00 mg/mL were determined. Consequently, there are positive correlations between enzyme inhibitions and antioxidant capacity of both honey and pollens ekstracts.
