Son yıllarda gerek dünyada gerekse ülkemizde gastronomi alanında yapılan çalışmaların arttığı görülmektedir. Türkiye'de gastronomi bölümlerinin varlığı ve literatürde sıkça yer alması gastronomi kavramını derinlemesine incelemeyi zorunlu kılmıştır. Araştırmanın amacı, Türkiye'de gastronomi kavramının aşçılık ve gastronomi/mutfak sanatları bölümü öğrencileri tarafından nasıl algılandığının belirlenmesidir. Bu amaçla veri toplama aracı olarak kelime ilişkilendirme testi (KİT) formu kullanılmıştır. Araştırmanın evrenini Gastronomi alanında eğitim alan öğrenciler oluşturmaktadır. Amaçlı örnekleme modelinden ölçüt örnekleme yöntemi seçilmiştir ve örneklem grubu olarak gastronomi ve mutfak sanatları öğrencileri ve aşçılık programı öğrencilerine uygulama yapılmıştır. 25 Nisan-2 Mayıs tarihleri arasında 26 üniversiteden 69 öğrenciye ulaşılmış ve gastronomi algıları belirlenmiştir. Sonuç olarak, katılımcılardan toplam 481 yanıt alınmış ve en fazla "sanat", "mutfak", "yemek", "kültür", "lezzet" kelimeleriyle ilişkilendirme yapılmıştır. Ayrıca gastronomi tanımlarında "mide bilimi", "yeme içme kültürü", "mutfak sanatı" na vurgu yapılmıştır It has been observed that the number of studies done in the gastronomy literature, both In Turkey and worldwide, has increased in recent years. The presence of gastronomy departments in Turkey and the frequent presence of them in the field necessitated an indepth analysis of the concept of gastronomy. The aim of the research is to determine how the concept of gastronomy is perceived by the students of the department of cookery and gastronomy / culinary arts in Turkey. The word association test form was used as the data collection tool for this purpose. The universe of the research were the students who are trained in tha field of gastronomy. The sampling method was chosen from the purposeful sampling model and the sample group was applied to students of gastronomy, culinary arts and cookery program students. Between 25 April and 2 May, 69 students from 26 universities did the test and their perceptions of gastronomy were determined. As a result, 481 replied in total and most were associated with the words "art", "cuisine", "food", "culture", "taste". In addition, gastronomy definitions emphasized "stomach science", "eating and drinking culture", "culiniary art".
